Our cheeses
All our cheeses are produced and are aged in our dairy mainly with raw milk coming from the pastures of the Territory and other areas of the Ligurian-Piedmontese Apennines
close to us.We are very attached to seasonal cycles and we try to keep artisanal production practices solid and alive, but we also love to look at the tomorrow and in our cheeses, tradition
and innovation find a meeting point. Attention to a genuine, ethical and quality raw material is an indispensable condition in order not to betray
the philosophy with which we carry out our work. Working mainly raw milk, from pasture to your
tables, the entire supply chain is always strictly controlled and monitored.
The Montébore is undoubtedly the most well-known and sought-after cheese, but it is only one of the products of the dairy.
We also produce other cheeses linked to the history of the territory in which we find ourselves, plus others the result of conscious experimentation and savoir faire that we have acquired over time, thus creating cheeses such as Cadetto (di Mont ébore), Ruè, Mongiardina, Mollana della Val Borbera and Grattone, which takes the name from the
surname of our family. We also produce soft and delicate ricotta, blue cheeses and delicious goats.
